I think La Cava finally has an operator who can take it to the heights to which it has aspired.  Tim Dionne is an experienced chef, trained in the culinary arts, and former restaurant owner who recently moved with his wife to Colorado Springs last year to take over this South 8th Street location.  I have met him, seen the place, and really enjoyed my meals.  On this evening Tim will be offering, as specials, two appetizers - the homemade guacamole and the tamale plate with two tamales.  Both will be priced at $6 (regular price $9).  The entrees offered will be braised beef enchiladas with jack cheese, red sauce, queso fresco, onion  and cilantro, and the roasted chicken enchiladas, both at $14 (regular price $18).  Big plates, plenty of food.  Full service bar making great margaritas, and plenty of close in free parking.  The decor is magnificent.  This will be a special night.
